Send the kids out in the garden to pick some lavender and make these delicious biscuits together.
150g butter
90g caster sugar
225g plain flour
1 egg yolk
1 tablespoon chopped lavender leaves
a handful of lavender flowers (removed from the spike)
Cream the butter and sugar, add flour, egg yolk, lavender leaves, mix well.
Knead the mixture by hand on a floured surface into a smooth ball.
Roll the ball into a sausage (8-10 cm diameter)
Slice the sausage into biscuit sections, lay them flat on a baking tray, press lavender flowers into the top of each biscuit.
Bake for approx 15 mins until golden but not brown.
Cool on the tray for 5 mins before moving or they will crumble.
